Today we are taking a delicious deep dive into one of my absolute favorite pantry grains — pearl barley. If you’ve been looking for a budget-friendly, comforting, nutrient-dense grain that adds versatility to your everyday meals AND your preparedness pantry… this is one you don’t want to skip.

Barley Mushroom Bake

Ingredients
  

  • 1 clove garlic
  • 4 oz or more of mushrooms
  • 2 tbsp butter
  • 1 cup pearl barley
  • 2 cups broth (any flavor, beef, chicken or veg)
  • 1/2 tsp dried thyme
  • pepper to taste

Instructions
 

  • Preheat oven to 350F
  • Place all ingredients into oven safe dish, mix and cover.
    Bake for 1 hour
  • Let rest for a few minutes and enjoy.
