Make Your Own Brownies

You know that little cardboard box of brownie mix sitting in your pantry? The one with an ingredients list longer than a CVS receipt? Yeah, we're breaking up with that.
Turns out the "convenience" in convenience food is mostly convenient for the company selling it to you — not so much for your wallet or your peace of mind. Homemade brownie mix is just flour, sugar, and cocoa doing what they do best, minus the preservatives you can't pronounce and the markup you definitely can. Stir it together once, stash it in a jar, and future-you gets brownies on demand — fudgier, cheaper, and drama-free.
So consider this your permission slip to ditch the box. Your pantry's already got everything it needs.

Ingredients
  

For the Mix (Fills 1 quart jar)

  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp espresso powder (optional)

To Make The Brownies

  • 1/4 cup Melted unsalted butter, vegetable oil
  • 1 Large Egg
  • 1 1/2 tsp Water
  • 1/2 tsp Vanilla Extract

Instructions
 

To Make The Mix

  • Whisk together all mix ingredients in a large bowl. Place in an airtight container or gallon size ziploc bag. Store until ready to make brownies.
    ou can also gift this brownie mix in a quart jar. Just attach directions as written below!

To Make A Small Pan

  • Mix 1 cup of Brownie Mix with 1/4 cup melted butter (or you can use vegetable oil, or liquid coconut oil), 1 egg, 1/2 teaspoon vanilla extract, and 1 1/2 teaspoons water. Spread in a loaf pan (4×8 or 9×5) that’s been lined with foil and sprayed with cooking spray. Bake at 350°F for about 12-15 minutes, until a toothpick comes out 1” from the edge of the pan with only a few crumbs. Cool before slicing into squares.

To Make a 9×9-inch Pan of Brownies

  • Mix 2 cups of Brownie Mix with 1/2 cup melted butter (or you can use vegetable oil, or liquid coconut oil), 2 eggs, 1 teaspoon vanilla extract, and 1 tablespoon water. Spread in a 9×9” pan that’s been lined with foil and sprayed with cooking spray. Bake at 350°F for about 20-24 minutes, until a toothpick comes out 1” from the edge of the pan with only a few crumbs. Cool before slicing into squares.
