Clean, sort and soak pinto beans. To quickly hydrate beans, you may cover sorted and washed beans with boiling water in a saucepan. Boil 2 minutes, remove from heat, soak 1 hour and drain. Cover beans soaked by either method with fresh water and boil 30 minutes.
Cook ground beef just until it is no longer pink.
Mix beans and beef together along with spices
Divide mixture between jars (this makes 8 pint and a half jars)
Add hot water, beef broth, vegetable broth or a thin tomato sauce, leaving 1 inch headspace. Debubble and check headspace again.
Wipe rims, add lids and rings. Pressure can at the PSI for the size jars you choose.
