Cranberry Pecan Granola
Ingredients
- 3 cups rolled oats
- 1 1/2 cups chopped raw pecans
- 1 cup unsweetend coconut flakes
- 2 tbsp flaxseed
- 1 tbsp ground cinnamon
- 1/4 tsp salt
- 3 tbsp honey or maple syrup
- 3 tbsp brown sugar
- 1 tbsp vanilla extract
- 3 tbsp melted coconut oil
- 1 cup dried cranberries
Instructions
- Preheat oven to 300 degrees Farenheit
- mix all ingredients in a large mixing bowl. Mix well to insure everything is incorporated
- Spread mixture on parchment paper on a baking sheet evenly
- Bake for 15 minutes, remove baking sheet, mix granola and spread evenly again. Returning to oven for 20 minutes or until golden brown.
- Let cool completely before placing in an air tight container. Lasts up to 4 weeks. Makes approximately 5-6 cups
