Ingredients
  

  • 2/3 cup dried chickpeas ground into flour (you will use 3/4 cup of the chickpea flour for the recipe)
  • 3 (or more) cloves garlic
  • 2 cups water (or stock of choice)
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 1/3 cup olive oil
  • Salt & Pepper to taste

Instructions
 

  • Grind the dried chickpeas per your mills instructions into a fine flour.
  • Roast your garlic in the oven or over the stove until brown and soft.
  • In a medium pan, add water and chickpea flour, stirring well until combined. Bring to a low boil, stirring constantly. Should resemble a porridge.
    Set aside and let cool for at least half an hour.
  • Combine remaining ingredients in the food processor, add cooled chickpea flour mixture and combine well.
  • Chill before serving.
