Ingredients
  

  • 2 pints black beans
  • 1 10oz can enchilada sauce
  • 1 can diced tomatoes
  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 med diced onion
  • 1/2 tbsp cumin
  • 1/2 tbsp smoked paprika
  • salt and pepper to taste
  • 8 oz shredded cheese of your choice

Instructions
 

  • Place olive oil in pan, heat and add garlic and onion. Sautee
  • Next add diced tomatoes and enchilada sauce
  • Add cumin and smoked paprika, salt and pepper to taste
  • Add black beans and mix well
  • Top with shredded cheese and bake at 450 for 10 minutes
