Make Your Own Cornbread Mix (Because Jiffy Isn’t the Only Way)

There’s a version of dinner that happens when you’re one side dish short and cornbread is the answer to basically everything — chili night, soup night, “we need something warm and I don’t want to think too hard” night.

Usually that means grabbing a box mix. Which is fine. But it’s also flour, cornmeal, sugar, baking powder, and salt — five things you already have — with a markup for somebody else measuring them for you.

So skip the box. Make the mix once, keep it in the pantry, and cornbread becomes a “we have everything for that” situation instead of a grocery run.

Why This One’s Worth Keeping On Hand

Ingredients
  

  • 3 cups cornmeal
  • 3 cups all purpose flour
  • 2 cups sugar
  • 3 tbsp baking powder
  • 1 tsp salt

  • Whisk everything together and store it in an airtight container in a cool, dry place. Label it with the date and the ratio below, so it's ready whenever cornbread is the answer.

To Make Cornbread

  • Preheat the oven to 400°F. Grease an 8×8 pan.
    Combine 3 cups of the dry mix with 2 eggs, 1 cup milk, and ½ cup melted unsalted butter.
    Stir the wet ingredients into the dry until just combined, pour into the greased pan, and bake for 20–30 minutes, until golden on top and a toothpick comes out clean.
